I've joined this web site to obtain help with meal/menu planning as well as help coping with diabetes. Although I love to cook, I prefer recipes that don't contain lots of ingredients.

 

I clicked on the 7-day menu plan and shopping list. I need a simpler plan without such a lengthy shopping list. The fruit list alone contained 23 items, some multiple, including 26 individual pieces of fresh fruit as well as several cans (3) of different fruit.

 

I try to shop only 1x a week because I have an eating disorder and I don't want the temptation of being in the grocery store so often. Also, purchasing all the food listed on your shopping list would cost much more than my budget would allow even though I have a fully stocked kitchen and pantry (herbs, spices, etc.).

 

I also understand the idea behind variety in one’s diet; so a person doesn't get bored, etc.  However every day's menu involves so much prep it would be hard to follow with so much chopping, slicing, etc. as the menus suggest. And where does one store all that food???

 

I do appreciate the recipes that serve one person since I live alone. I do like your web site and I think it gives people with diabetes important information and support.  The letters are helpful in everyday coping and with helpful hints and insights. The meal plans could use a different approach with less work and more ease of preparation without such a vast variety. I think it could be achieved with careful thought to carbs and fat without having to use so many ingredients. Most home cooks are put off by recipes that call for so many ingredients.

 

I think some simple recipes might be received with open arms since our lives are so busy.
