My diabetes is not what I consider serious, and it is not
particularly progressive, although I have graduated from just medicines to
taking an insulin shot at bedtime.
Normally, I eat either oatmeal in the mornings or meat
and eggs with hash browns and one piece of wheat toast and butter. I try to
avoid processed foods. I have cashew nuts for snacks and/or nonfat yogurt or
gelatin (no fat, no sugar) and chocolate pudding topped with "light"
whipped topping once a day.
I avoid sandwiches or bread for lunch, but figure I need
some carbs and am not religious about it. Cottage cheese and fruit works well
with crackers and a glass of milk, as does sugar-free ice cream. I drink 1%
milk or diet soda and water.
Dinner consists of lean meat, salads (cole slaw is good),
and veggies. Pork chops are kind to me. My goal is to hold readings after
eating under 140 mg/dL, and fasting under 100 mg/dL, but have readings
generally as low as 70 mg/dL upwards.
My philosophy is: KEEP IT SIMPLE. I do very well, but
appreciate that my solution may not work for all.
